what is the best size for a canvas art print?
I'm looking to start selling some of my photographs and digitally altered work as canvas art prints, but I don't know what is the most desirable/salable size to go for.
I'm looking at stuff with a standard 2:1 width-height ratio, but if you guys can give me a professional or informed answer, it'd be much appreciated.

This really depends, are you going to be framing them? If so, you're going to want to be making them standard frame sizes (8x10", 11x14", etc) so that people can easily put them in. Yes, some people do frame canvas art instead of having the standard wraparound, it's actually easier and in some cases *less* expensive.

Other than that, it honestly depends - I'll go all metric system on you for a minute and say that 80x60cm, 90x50cm, 100x40cm and 90x40cm are the "most common" canvas frames out there, and while they're all "about" 2:1 width height, a few more common ratios are 4:3, and 3:1. You can do anything you want with the canvas though really, stretchers aren't horribly particular unless you have some sort of strange panoramic that's 10:1 or something that'll be tough to find a backing frame for.
